Kale & Pine Nut Salad

Normally I juice kale for its benefits but I want to show you how to make a fantastic kale salad.

Kale is not always easy to prepare but there are some tricks we’ve established in our home. (See tips below)

This kale salad will invigorate your palate and goes great with salmon, cod, chicken, or steak. It’s great by itself also for lunch too.

If you’re wondering why use kale or why is everyone talking about kale? Let me tell you, it’s for good reason. Here’s just a few reasons.

Kale…

  • is among the most nutrient dense foods in existence.
  • is loaded with powerful antioxidants. Antioxidants fight oxidative damage caused by free radicals in the body (rusted white blood cells if you will).
  • has multiple Cancer fighting substances.
  • is high in beta-carotene and vitamin K.
  • is high in lutein which protects the eyes.

Instructions
For the Dressing
  1. Stir lemon juice, olive oil, honey, salt and pepper together in a large bowl.
For the Salad
  1. Chop kale into small bite size pieces
  2. Add chopped kale, currants, pine nuts and parmesan to bowl with dressing
  3. Stir ingredients together
  4. Garnish salad with more pine nuts and parmesan cheese
Recipe Notes

I recommend the Norpro stainless-steel juice press for juicing lemons.

Tips for preparing kale.

  1. Remove the ribs - No matter which variety of kale, you always need to remove the ribs which is the hard, thick center between the leaves.
  2. Chop it - chop small into bite size pieces
  3. Massage it - Yes, I said massage it! Sounds odd but it makes all the difference. Scrunch it as you move it around with your hands until it becomes fragrant.
